The Best Grain-Free Caviar Blini
Freezer-friendly, travel-ready, caviar-approved
I love caviar. It is one of my favorite meals when done right. Here is my recipe for the best grain-free Caviar Blini. It's great for holidays and they travel so well. The most important thing is the caviar, this one is Royal Ossetra Caviar. I'll be eating these over the holidays.
INGREDIENTS
5 eggs
1 cup blanched almond flour
1/4 cup coconut flour
1/2 cup nut milk (I used unsweetened almond milk)
Jennifer Fisher Spicy Salt
Avocado oil (for frying)
FOR SERVING
Caviar
Coconut yogurt (used instead of crème fraîche)
Capers
Chopped egg
Red onion
Chives
PROCESS
Crack and whisk 5 eggs until smooth.
Add almond flour, coconut flour, and nut milk.
Mix until combined into a loose, pancake-style batter.
Season lightly with spicy salt, if desired.
Heat a nonstick pan over medium heat with about 1 tablespoon avocado oil.
Spoon about 1 tablespoon of batter per blini into the pan.
Cook until lightly browned, flip, and cook through.
Repeat until batter is finished, wiping pan and adding oil as needed.
Serve warm or at room temperature.
NOTES
Keep blinis small, about silver-dollar size.
Makes approximately 35–40 blinis.
Batter can be left unsalted if preferred.
Blinis freeze well and travel easily.
Can be made ahead and gently reheated.
The blini is the vessel — the caviar is the star.
