My go-to ways to cook eggs
Eggs are one of the easiest ways to get protein in quickly, and once you know a few simple techniques, you can make them exactly how you like them every time. These are the four ways I make eggs the most at home: jammy, fried, poached, and scrambled.
INSTRUCTIONS
Jammy Eggs
Add about 1 inch of water to a small saucepan and bring it to a boil.
Gently place your egg into the boiling water.
Cover the pan and cook for 6 minutes.
Remove the egg and place it immediately into an ice bath.
After about a minute, peel the shell and slice open.
Finish with salt or a little spicy salt.
Fried Eggs
Heat a pan over medium heat.
Add vegan butter or olive oil.
Once the butter or olive oil is bubbly, crack the egg into the pan.
Season with salt and pepper.
Add a tiny splash of water to the pan and cover with a lid.
Let the steam cook the top for 20–30 seconds.
Remove from the pan and serve.
Poached Egg
Bring about 2 inches of water to a boil.
Crack the egg into a small bowl.
Add a splash of white vinegar to the water.
Lower the heat so the water is at a gentle simmer.
Use a spoon to create a whirlpool in the center of the water.
Gently drop the egg into the middle.
Cook for 4 minutes.
Remove with a slotted spoon and season.
Scrambled Eggs
Crack 3 eggs into a bowl.
Whisk well with a whisk.
Heat 1 tablespoon olive oil in a pan over medium-low heat.
Add eggs once the oil starts to shimmer.
Season lightly with salt and pepper.
Stir gently while cooking.
Turn the heat off just before they are fully set.
Fold the eggs once more and remove immediately so they stay soft and loose.
