Grilled Cantaloupe Shrimp Tacos
Sweet, spicy, grilled, and so good.
These tacos started with cantaloupe, which was one of my Grandpa Dean’s favorites. I grill it with JF Spicy Salt and garlic olive oil, along with shrimp, shishito peppers, and red pepper. Once everything cools, I chop the peppers into a slaw and toss it with my Mustard Vinaigrette. Layer everything onto grain-free tortillas and that’s it. Sweet, spicy, salty, and so freaking good. This one’s for you, Grandpa Dean.

Ingredients:
Cantaloupe
Shrimp
Shishito peppers
Red pepper
JF Spicy Salt
Garlic olive oil
JF Mustard Vinaigrette
Grain-free tortillas
Salt, as needed
Process:
- Cut the cantaloupe and coat both sides with JF Spicy Salt and garlic olive oil.
- Grill the cantaloupe along with the shrimp, shishito peppers, and red pepper.
- Remove everything from the grill as it finishes cooking and allow it to cool.
- Remove the stems from the shishitos and chop the peppers.
- Toss the chopped peppers with JF Mustard Vinaigrette to create the condiment slaw. Add a little extra salt if needed.
- Warm the grain-free tortillas.
- Layer the grilled shrimp, cantaloupe, and condiment slaw onto each tortilla and serve.
